THE GRAPE

Dark-skinned Primitivo is quite the globe-trotting grape. Originally from Croatia (where it’s called Tribidrag), it found its way to sunny Puglia, then onto California (where it’s known as Zinfandel) as Italians migrated there to seek their fortunes during the gold rush. True to the ‘primi’ in its name, Primitivo ripens early in Puglia’s hot climate, and the region’s ancient vines produce seriously concentrated flavors.
