THE WINE
California’s world-class Cabs can compete with the best from Bordeaux and beyond, but they often cost a pretty penny —especially now. 2021 is yet another great (but low-yielding) vintage, and demand for these top-notch wines is higher than ever. But thanks to the connections our California expert has, we were able to secure this rich Cabernet Sauvignon at a friendly price. From a leading grape-growing family and prime-sited vineyards across the Golden State, it boasts a history of top acclaim and brims with ripe black-fruit flavor and chocolatey oak notes.
THE GRAPE
Cabernet is the king of the reds, loved for its deep- colored, black currant-rich wines. Most famously, it’s the variety that powers Bordeaux’s legendary First Growths, like Château Lafite and Château Margaux. However, you’ll also find plenty of world-class examples in California. The best known (and expensive) reds come from the Napa Valley and Sonoma, but there are many hot spots across the Golden State that deliver big bang for your buck.
THE VINTAGE
Two major factors contributed to the quality of California’s 2021 growing season. First, the vineyards benefitted from mild summer weather, meaning there were no heat spikes to spoil the fruit. Second, the Golden State continues to experience severe drought, which makes for fewer and smaller grapes. However, the grapes that are grown have more intense, concentrated flavors.
WITH FOOD
With its firm tannins and dark berry flavors, Cabernet’s a classic partner for beef, from prime cuts of steak to juicy burgers. With its rich, ripe fruit character, this top-vintage red pairs well with a variety of burger ‘fixins,’ from bacon and barbecue sauce to creamy blue cheese and caramelized onion. If meat’s not on the menu, it’ll do just as well with hearty tomato-sauced pastas.
