The Wild Bunch (1969)A beefy wine calls for an equally robust movie. The Wild Bunch was director Sam Peckinpah’s ode to the Wild West in its final days. Starring William Holden and Ernest Borgnine, the movie, like the wine, pulls no punches. It is noted for helping to shift the genre from that of chivalrous heroes to a more layered approach.
THE WINE
Red-wine lovers are always looking for a great bottle to pair with steak, roasts and other juicy meats. Our California expert, Clare Tooley, has found the perfect match in Tri-Tip. Named after a traditional California cut of beef, this sumptuous red blend hails from prime-sited Central Coast vineyards—and it sports a silver medal from the San Francisco International Wine Competition. You’re in for ripe dark-fruit characters, with a luscious palate that can stand up to your favorite cuts (or hearty stews and pastas). THE GRAPES
The four red grape varieties that make up Tri-Tip are originally from France, but they reach new levels of richness in California. Syrah (38%) contributes the vibrant berry flavors, while Cabernet Sauvignon (27%) imparts classic black currant characters. Merlot (25%) adds more black fruit and a velvety texture, and a healthy dose of Petite Sirah (10%) deepens the wine’s color and gives some heft to the body.
THE STYLE
As a category in the U.S., red blends like Tri-Tip are extremely popular—and they’re still on the rise. But it’s by no means a new trend. For centuries, winemakers in Old World regions like Bordeaux, Rioja and Tuscany have known that melding different grapes together can result in a wine of greater complexity and finesse. It’s a great way to enjoy the best of many grapes, not just one.
WITH FOOD
Combine: 1 TBS each salt, paprika and brown sugar; 2 tsp each black pepper, chili powder and cumin; 1 tsp each onion powder, garlic powder and white sugar; 1/2 tsp each coriander, cayenne and chipotle. Rub mixture on steak, then cover and refrigerate at least 24 hours. Remove from fridge 30 minutes before grilling over medium-high heat until desired level of doneness.
